KAN, Frederick Lai Yin
It is with very heavy hearts that we announce the passing of Master Chef Fred Kan. Fred was 35 years young when unexpectedly he was taken too soon from our lives by cancer on November 14, 2012. Fred passed away peacefully and quietly at Mount Sinai Hospital in Toronto surrounded by his loving family and friends.

Fred was born on February 7, 1977 in Los Angeles, California. He is the son of Mr. & Mrs. Eric & May Kan, brother to Gilda and brother in-law to Mihai. Fred was very social and has a wide range of friends from all over the world. He always welcomed everyone he met with open arms into his home and was known to cook big feasts and host great parties. His priority was to ensure all his friends and family were well taken care of.

Fred was a gentle giant and had a big personality to go along with his big stature. Many people who encountered Fred will remember his big bear hugs, contagious laugh and unforgettable smile.

Fred was tremendously generous, always thinking of others and found meaningful ways to touch the lives of those around him. Seeing and answering the needs and wants of others came easily. Right up to the last day, he made sure those around him were comfortable. Even requesting a larger room knowing there were many visitors coming to see him. He wanted them all to not just fit but be comfortable in his room.

For the past ten years, Fred called Shanghai home where he established himself as a master chef and entrepreneur. In those years he spent time managing two separate bars, overseeing an organic soup delivery business, working as a food and beverage director for Yong Foo Elite (one the most exclusive fine dining Chinese restaurants in Shanghai), opening the first deli in Carrefour and, most recently, celebrating his crowning achievement - Pho Real: three award winning Vietnamese restaurants. In addition to his culinary and business expertise, he had a thriving career in front of the camera with appearances in two ICS programs – Smart Cook and Independent Inspector and he played the part of an Emperor in two National Geographic documentaries.

The doctors and nurses of Mount Sinai were professional and compassionate with their care of Fred. For this reason the family requests that any donations be directed to Mount Sinai Hospital and/or Princess Margaret Hospital to continue to provide others in similar situations with the same outstanding care.
